Provence thyme
Common thyme, or farigoule, belongs to the vast Lamiaceae family, which includes many aromatic plants, such as rosemary, sage, etc.
Known as the herb of Provence, thyme grows mainly in small shrubs. There are over 150 species worldwide.
It grows very easily in our arid mountain climate and flowers mainly from May to July. It produces small white and pink flowers.
During the summer months, its small, tasty leaves gorge themselves on an essential oil with numerous virtues.
A plant with a thousand virtues
Used mainly as an aromatic, thanks to its distinctive taste, thyme is an aromatic herb that has been part of the human diet since the dawn of time.
The first traces of its use date back to the 1st century.
Thyme was used to preserve meat.

The Appellation d’Origine Protégée for Thyme de Provence is very recent.
Since February 19, 2018, Thym de Provence has benefited from an AOP that recognizes the gustatory quality of this popular herb.
Often grown in open fields or natural environments in our beautiful Provence, Thyme d’ici is characterized by a stronger taste than thymes grown in more humid regions.
Thyme deprived of water has a stronger, more concentrated flavor, giving it a unique taste that smells of the South!
